DANDELION HONEY

This Vegan alternative to honey has a super floral flavour and only requires 3 ingredients. Pick dandelions from early spring to late summer. Make sure to pick flowers away from pollution and high traffic areas.

60 large dandelion heads

1/4 tsp fine sea salt

2 medium sized strips of lemon peel

caster sugar (equal to weight of dandelion heads)

  1. Remove all the yellow petals from the heads of the flowers.

  2. Add the petals to a saucepan with 500ml of water and the lemon peel. Bring to a boil and then lower the heat and simmer for around 30 minutes. Remove from the heat and steep for a further 30 minutes until cool.

  3. Strain the cooled liquid through muslin or a fine sieve and discard the petals.

  4. Weigh the dandelion liquid and then add an equal weight of caster sugar. Return to a pan, bring to a boil, lower the heat and simmer on a very low heat for around 45 minutes or so, occasionally swilling the pan until the liquid has thickened to a light syrup consistency.

  5. Pour into a sterilised jar, cover and leave to cool. Store in the fridge for up to a month.
