DANDELION HONEY
This Vegan alternative to honey has a super floral flavour and only requires 3 ingredients. Pick dandelions from early spring to late summer. Make sure to pick flowers away from pollution and high traffic areas.
60 large dandelion heads
1/4 tsp fine sea salt
2 medium sized strips of lemon peel
caster sugar (equal to weight of dandelion heads)
Remove all the yellow petals from the heads of the flowers.
Add the petals to a saucepan with 500ml of water and the lemon peel. Bring to a boil and then lower the heat and simmer for around 30 minutes. Remove from the heat and steep for a further 30 minutes until cool.
Strain the cooled liquid through muslin or a fine sieve and discard the petals.
Weigh the dandelion liquid and then add an equal weight of caster sugar. Return to a pan, bring to a boil, lower the heat and simmer on a very low heat for around 45 minutes or so, occasionally swilling the pan until the liquid has thickened to a light syrup consistency.
Pour into a sterilised jar, cover and leave to cool. Store in the fridge for up to a month.
